Do you feel like you have this, that and the other thing going on? Maybe you have kids and life is, well, insane. I don't have kids, but I do live a fast pace life (which I'm trying to slow down) and every one of my friends have children. I give all you mommas out there the biggest kudos there is! Between dropping them off at the sitter, going to work, sporting events, cleaning the house, grocery shopping, homework, oh and in between you have to figure out dinner. I'm sure cooking a big meal is the last thing you want to do.
Even if you don't have children, life can still be crazy, busy. Believe me, I know!
Well this dinner is the "when I don't feel like cooking, home cooked meal." It literally takes like 10 minutes. It's a dump dish and pretty healthy!

>>>This is enough to feed 4 or my husband and I with lots of left overs.
INGREDIENTS:
1LB Ground turkey
1 can black beans (rinsed & drained)
1 can diced tomatoes (drained)
1 can corn (drained)
garlic
salt
pepper
cumin
all seasoning salt
Soft Tortilla (I found spinach herb at Aldi... AMAZING)
Shredded Cheddar Cheese
WHAT TO DO:
* Brown and season the ground turkey in a skillet (I use cast iron).
* Once browned, dump the cans, add garlic and season again.
* Mix it up until all ingredients are hot.
* Scoop the mex-mix on a soft tortilla and sprinkle the cheddar cheese
* Fold it, wrap it, eat it up!
>>> I don't measure seasoning, I just sprinkle and taste and sprinkle again (like Grandma)
>>> It is a tad messy, but nothing you can't scoop up with some tortilla chips!
Extras: Add salsa or Spanish rice. Make a taco salad out of it. Use the mix as an appetizer with tortilla chips for a party.
What do you think? Do you have any quick meals?
