One Pan Wonder- Apple Cider Sausage

My husband and I recently finished our d-tox. I couldn't be more proud of my sweet tooth, junk-food junkie. Our 12 day journey consisted of eating ultra healthy, drinking plenty of H2O and taking tablets full of ground roots, flowers and herbs.
We both finished and are feeling great! The d-tox cleansed our liver, colon, kidneys and lymphatic system.

Anyways, this program forced me to meal prep and the easiest way I found to do this is what I call, making "One Pan Wonders." You can make everything in one pan, quickly; which is just my style.

HERE'S THE RECIPE:
Makes 4-6 servings
What You Need:
8 Italian Sausage Links {I got mine from Duma's Meats in Hartville Market}
2 Tbsp Dijon Mustard
3 Medium Sweet Potatoes, cubed
2 Medium Zucchini, sliced
2 Cups Apple Cider Vinegar {If you aren't a Vinegar fan use Apple Cider}
Snap Peas, halved
Olive oil
What To Do:
Cut sausage links into 4s
In a deep saute pan or cast iron, heat olive oil and add sausages
Brown for about 8-10 minutes, then stir in Dijon Mustard
Add Sweet Potatoes, then pour in Apple Cider Vinegar {or Apple Cider}
Simmer, covered, for 20 minutes.
Add Zucchini and Snap Peas
Cook for about 8 more minutes
Season with salt and Pepper
ENJOY this healthy hearty meal for dinner with a side of cottage cheese or pack it for lunch!
